Here are a couple of recipes for you to try!
CHEESE:
Ingredients:
- 1 qt Milk
- 2 Tbsp White Vinegar
- 1/4 c Lemon Juice
- 1/2 tsp salt
Heat milk to 180 degrees. Milk will begin to curdle, not boil. Remove from heat. Add lemon and vinegar. Stir for 5 minutes. Strain from cheesecloth. Let it hang for at least an hour. Don’t squeeze. Add salt and whatever tightly in plastic wrap. Suggestion (Lemon, Blueberry, Basil)
YOGURT:
Ingredients:
- 1 gallon milk
- 3-4 Tbsp greek yogurt starter (5% fage, 9 drops rennet)
Heat milk slowly and stir frequently till 185-190 degrees. Remove from heat and cool to 110 degrees. In a small bowl combine yogurt starter with a few tbsp of the heated milk. Add to the pot and stir well. Cover pot and wrap in towel. Let sit 12-24 hours. Strain through cheesecloth.
